It is also baseball night, so I like that I can make this in the AM before work, pop it in the fridge all day then throw it in the oven when we get home from baseball.

You know me WAY too well!! I will be ommiting the onions :)
HA! I knew it, and you probably aren't doing the red onion on the Grilled Lime Chicken Sandwiches either! :-) You make me laugh! If you chop the onion small enough, I promise you cannot taste it, and it adds SOOOOOOOOOOOOOOO MUCH FLAVOR! I love onions!
Even though my palet has matured through out the years I just can't do it!! Even if I could tolerate the texture, I suck at cutting/chopping vegetables!! That's why I need the Ninja :)
No Red Onions either!
Someone told me to shred them with a cheese shredder...ever tried that?
Oh yes, I have shred many a thing, especially for potato pancakes. Tonight we had potato and apple pancakes, they were alright, nothing like Perkin's! Just start putting them in, eventually you will not notice. Pat eats them ALL THE TIME!
